Eggplant Casserole

Ingredients
  

  • 1 eggplant
  • 1 egg
  • Dash of instant minced onion
  • 1/2 cup bell pepper diced
  • 1 to mato diced
  • 1 Tablespoon oil
  • 1/2 cup toasted bread crumbs
  • Salt and pepper to taste
  • Cheese grated

Instructions
 

  • Peel, slice and cook eggplant until mushy. Drain and add egg and minced onion.
  • Mix all the remaining ingredients with the eggplant (except cheese). Pour into
  • a greased casserole dish. Cook in a 400 degree oven until done (about 1 hour).
  • Remove from oven and top with grated cheese. Return to oven to melt the
  • cheese.
