Eggplant Casserole
Ingredients
- 1 eggplant
- 1 egg
- Dash of instant minced onion
- 1/2 cup bell pepper diced
- 1 to mato diced
- 1 Tablespoon oil
- 1/2 cup toasted bread crumbs
- Salt and pepper to taste
- Cheese grated
Instructions
- Peel, slice and cook eggplant until mushy. Drain and add egg and minced onion.
- Mix all the remaining ingredients with the eggplant (except cheese). Pour into
- a greased casserole dish. Cook in a 400 degree oven until done (about 1 hour).
- Remove from oven and top with grated cheese. Return to oven to melt the
- cheese.
