Ingredients

Dash of instant minced onion

bell pepper
diced

toasted bread crumbs
Salt and pepper to taste
Cheese
grated
Instructions
Peel, slice and cook eggplant until mushy. Drain and add egg and minced onion.
Mix all the remaining ingredients with the eggplant (except cheese). Pour into
a greased casserole dish. Cook in a 400 degree oven until done (about 1 hour).
Remove from oven and top with grated cheese. Return to oven to melt the
cheese.
