Squash Patties

Cleazel's name for this recipe was "Squash Croquettes'. When her grandkids were very young, she would make these 'patties' and they would dip them in ketchup.

Course Vegetables and Casseroles


  • 4 cups sliced squash
  • 1 small onion chopped
  • 3/4 cup flour
  • 1/2 cup milk
  • 1 egg slightly beaten
  • 3 T. salad oil
  • 1 Tablespoon sugar
  • Oil for deep frying


  • Combine squash and onion. Add small amount of water. Cook until just tender - do not overcook.
  • Drain.
  • Add next 5 ingredients, mixing well.
  • Drop by rounded teaspoonfuls into hot oil (enough to cover completely).
  • Cook until golden brown.
