Betty's Jalapeño Rice
Ingredients

- 1 cup cooked rice
- 1 can "jalapeno flavored' black eyed peas drained
- 1 small bell peppet chopped
- 1 small sweet onion chopped
- 1 2 oz. Can diced pimento, drained
DRESSING:
- 3/4 cup mayonnaise
- 1 Tablespoon apple cider vinegar
- 2 - 3 packages artificial sweetener or 1 1/2 tablespoon sugar
Instructions
- Combine vegetables with rice. Gently fold the dressing into black eyed pea mix-
- ture and chill.
- For a very colorful dish, substitute 1/2 of a
- sweet red pepper and 1/2 of a sweet yellow pep
- per for the bell pepper. Wonderful flaver and
- good to look at.
