Betty's Jalapeño Rice

Ingredients
  

  • from Betty Appleton
  • 1 cup cooked rice
  • 1 can "jalapeno flavored' black eyed peas drained
  • 1 small bell peppet chopped
  • 1 small sweet onion chopped
  • 1 2 oz. Can diced pimento, drained

DRESSING:

  • 3/4 cup mayonnaise
  • 1 Tablespoon apple cider vinegar
  • 2 - 3 packages artificial sweetener or 1 1/2 tablespoon sugar

Instructions
 

  • Combine vegetables with rice. Gently fold the dressing into black eyed pea mix-
  • ture and chill.
  • For a very colorful dish, substitute 1/2 of a
  • sweet red pepper and 1/2 of a sweet yellow pep
  • per for the bell pepper. Wonderful flaver and
  • good to look at.
