Ingredients

cooked rice
1
can "jalapeno flavored' black eyed peas
drained
1
small bell peppet
chopped
1
small sweet onion
chopped
1
2 oz. Can diced pimento, drained
DRESSING:
3/4
cup
mayonnaise
1
Tablespoon
apple cider vinegar
2 - 3
packages artificial sweetener or 1 1/2 tablespoon sugar
Instructions
Combine vegetables with rice. Gently fold the dressing into black eyed pea mix-
ture and chill.
For a very colorful dish, substitute 1/2 of a
sweet red pepper and 1/2 of a sweet yellow pep
per for the bell pepper. Wonderful flaver and
good to look at.
