Zucchini Bread
Ingredients
- 4 eggs
- 1 t. cinnamon
- 2 cup sugar
- 3/4 t. baking powder
- 1 cup oil
- 2 cup grated zucchini
- 3 1/2 cup flour
- 1 cup chopped nuts
- 1 t. salt
- 1 cup raisins
- 1 1/2 t. baking soda
- 1 1/2 t. vanilla
Instructions
- Beat eggs, gradually add sugar and mix well. Add oil and beat. Mix together
- dry ingredients. Add to egg mixture alternately with zucchini, in small amounts,
- starting with dry ingredients, then zucchini. Add nuts, raisins and vanilla. Pour
- into
- 2 greased and floured loaf pans. Cuts better when thoroughly cooled.
- Freezes very well. Keeps 6 - 8 months. Bake at 350 degrees for 55 minutes or
- until done.
