Beat eggs, gradually add sugar and mix well. Add oil and beat. Mix together
dry ingredients. Add to egg mixture alternately with zucchini, in small amounts,
starting with dry ingredients, then zucchini. Add nuts, raisins and vanilla. Pour
into
2 greased and floured loaf pans. Cuts better when thoroughly cooled.
Freezes very well. Keeps 6 - 8 months. Bake at 350 degrees for 55 minutes or
until done.
