Company Best Pickles
Ingredients
- 10 medium cucumbers
- 8 cups sugar
- 2 T. mixed pickling spice
- 5 T. salt
- 4 cups cider vinegar
Instructions
- Place whole cucumber in a glass or stoneware jar. Cover with boiling water and
- let stand overnight. Drain.
- Repeat three times, three days with boiling water.
- On fifth day drain and slice cucumbers in 1/2 in. pieces. Combine sugar, spices,
- salt and vinegar - bring to boil and pour over cucumbers.
- Let stand for 2 days. On third day, bring to a boil and pack in hot jars and seal.
- Yields about 7 pints.
