Rice and Squash Bake

Ingredients

  • 1 lb. Ground beef
  • 1 medium onion chopped
  • 1/2 bell pepper chopped
  • 2 cups yellow squash chopped
  • 1 cup uncooked rice
  • 1 tsp. Salt
  • 1 can cream of mushroom soup
  • 2 cups water
  • 1 cup grated cheese optional

Instructions
 

  • Brown beef, onion and pepper. Add squash and 1 cup water. Simmer for 15
  • minutes. Add rice, salt, soup and the other cup of water. Place in covered dish
  • and bake at 350 degrees for 50-60 - minutes. Add cheese and return to oven for
  • about 10 minutes (until cheese melts).
