Old Fashioned Banana Pudding

Ingredients
  

  • 1/2 cup sugar
  • 1/4 cup sugar
  • 2 T. flour
  • 3 eggs - separated
  • 1/4 t. salt
  • 1 t. vanilla extract
  • 2 cups milk
  • vanilla wafers
  • bananas

Instructions
 

  • Mix sugar, flour and salt together in saucepan. Slowly add ilk, $tirring till
  • smooth. Heat to a full boil over medium high heat. Stir consistently. Reduce
  • heat to low and cook for 15 minutes more, stirring occasionally. Beat egg yolks
  • in bowl. Add a little of the milk mixture to the yolks and stir. Add yolks to mil
  • mixture gradually. Continue to cook for 5 minutes more. Remove from heat
  • and add vanilla.
  • Cover bottom of 1 quart casserole dish with about 25 wafers. Top with 2 sliced
  • bananas. Cover with 1/2 of custard mixture (about 1 cup). Repeat layers, end-
  • ing with custard. Beat egg whites until stiff. Slowly add 1/4 cup sugar. Whip
  • until stiff peaks form. Spread on top of pudding and bake in a pre-heated 425
  • degree oven for 5 minutes or until delicately brown. Serve immediately or
  • chilled.
