Italian Cream Cake
Ingredients
- 1 stick margarine
- 1 cup buttermilk
- 1/2 cup shortening
- 1 tsp. Vanilla
- 2 cups sugar
- 1 small can coconut
- 5 egg yolks
- 1 cup chopped nuts
- 2 cup flour
- 5 egg whites stiffly beaten
- 1 tsp. Soda
- cream cheese frosting
Instructions
- Cream margarine and shortening; add sugar, beat until mixture is smooth.
- Add egg yolks, beat well.
- Combine flour and soda, add to creamed mixture alternately with buttermilk.
- Stir in vanilla.
- Add coconut and chopped nuts.
- Fold in stiffly beaten egg whites.
- Bake in 3 greased 9 inch cake pans. Bake at 350 degrees for 25 minutes or until done.
CREAM CHEESE FROSTING:
- 8 oz. Cream cheese, softened
- 1/2 stick margarine, softened
- 1 tsp. Vanilla
- 1/2 cup chopped nuts
- 1 box confectioners sugar
- Beat cream cheese and margarine until smooth.
- Add powdered sugar and mix well.
- Add vanilla, beat until smooth.
- Add nuts.
- Spread between layers and on top of cake.
