Roll pastry 2 inches beyond edge of inverted pan. Ease into pan. Trim to 1
inch from edge. Make edge by folding pastry under. Flute with pinch and
twist of fingers.
Prick pastry thoroughly to prevent puffing while baking. No foil is needed
around edge because the single crust bakes in so short of time.
Bake for 8 to 10 minutes at 450 degrees. Fill with cream, chiffon, meringue
or refrigerated filling.
