Italian Cream Cake

Ingredients
  

  • 1 stick margarine
  • 1 cup buttermilk
  • 1/2 cup shortening
  • 1 tsp. Vanilla
  • 2 cups sugar
  • 1 small can coconut
  • 5 egg yolks
  • 1 cup chopped nuts
  • 2 cup flour
  • 5 egg whites stiffly beaten
  • 1 tsp. Soda
  • cream cheese frosting

Instructions
 

  • Cream margarine and shortening; add sugar, beat until mixture is smooth.
  • Add egg yolks, beat well.
  • Combine flour and soda, add to creamed mixture alternately with buttermilk.
  • Stir in vanilla.
  • Add coconut and chopped nuts.
  • Fold in stiffly beaten egg whites.
  • Bake in 3 greased 9 inch cake pans. Bake at 350 degrees for 25 minutes or until done.

CREAM CHEESE FROSTING:

  • 8 oz. Cream cheese, softened
  • 1/2 stick margarine, softened
  • 1 tsp. Vanilla
  • 1/2 cup chopped nuts
  • 1 box confectioners sugar
  • Beat cream cheese and margarine until smooth.
  • Add powdered sugar and mix well.
  • Add vanilla, beat until smooth.
  • Add nuts.
  • Spread between layers and on top of cake.
