Sweet Potato Surprise Cake

Ingredients
  

  • 1 1/2 cup cooking oil
  • 3 t. baking powder
  • 2 cup sugar
  • 1/4 t. salt
  • 4 eggs separated
  • 1 t. ground cinnamon
  • 4 T. hot water
  • 1 t. ground nutmeg
  • 2 1/2 cup sifted cake flour
  • 1 1/2 cup grated raw
  • 1 cup chopped nuts
  • sweet potatoes
  • 1 t. vanilla
  • Combine cooking oil and sugar and beat until smooth. Add egg yolks and beat

Instructions
 

  • well. Add hot water, then dry ingredients which have been sifted together. Stir
  • in potatoes, nuts, and vanilla and beat well. Beat egg whites until stiff and fold
  • into mixture. Bake in three greased 8 inch layer cake pans at 350 degrees for
  • 25-30 - minutes. Cool and frost.

FROSTING:

  • 1 large can evaporated milk
  • 1 c. sugar
  • 1 stick butter
  • 3 egg yolks
  • 1 t. vanilla
  • 1 1/3 cup flaked coconut
  • 1 cup shopped nuts
  • Combine milk, sugar, margarine, egg yolks and vanilla in saucepan. Cool over
  • medium heat about 12 minutes, stirring constantly until mixture thickens. Re-
  • move from heat and add coconut. Beat until cool and of spreading consistency.
  • Mix in 1 cup chopped nuts.
