Sweet Potato Surprise Cake
Ingredients
- 1 1/2 cup cooking oil
- 3 t. baking powder
- 2 cup sugar
- 1/4 t. salt
- 4 eggs separated
- 1 t. ground cinnamon
- 4 T. hot water
- 1 t. ground nutmeg
- 2 1/2 cup sifted cake flour
- 1 1/2 cup grated raw
- 1 cup chopped nuts
- sweet potatoes
- 1 t. vanilla
- Combine cooking oil and sugar and beat until smooth. Add egg yolks and beat
Instructions
- well. Add hot water, then dry ingredients which have been sifted together. Stir
- in potatoes, nuts, and vanilla and beat well. Beat egg whites until stiff and fold
- into mixture. Bake in three greased 8 inch layer cake pans at 350 degrees for
- 25-30 - minutes. Cool and frost.
FROSTING:
- 1 large can evaporated milk
- 1 c. sugar
- 1 stick butter
- 3 egg yolks
- 1 t. vanilla
- 1 1/3 cup flaked coconut
- 1 cup shopped nuts
- Combine milk, sugar, margarine, egg yolks and vanilla in saucepan. Cool over
- medium heat about 12 minutes, stirring constantly until mixture thickens. Re-
- move from heat and add coconut. Beat until cool and of spreading consistency.
- Mix in 1 cup chopped nuts.
