Zucchini Bread

Ingredients
  

  • 4 eggs
  • 1 t. cinnamon
  • 2 cup sugar
  • 3/4 t. baking powder
  • 1 cup oil
  • 2 cup grated zucchini
  • 3 1/2 cup flour
  • 1 cup chopped nuts
  • 1 t. salt
  • 1 cup raisins
  • 1 1/2 t. baking soda
  • 1 1/2 t. vanilla

Instructions
 

  • Beat eggs, gradually add sugar and mix well. Add oil and beat. Mix together
  • dry ingredients. Add to egg mixture alternately with zucchini, in small amounts,
  • starting with dry ingredients, then zucchini. Add nuts, raisins and vanilla. Pour
  • into
  • 2 greased and floured loaf pans. Cuts better when thoroughly cooled.
  • Freezes very well. Keeps 6 - 8 months. Bake at 350 degrees for 55 minutes or
  • until done.
