Ingredients
  

  • 1/4 cup shortening
  • 2/3 cup sugar
  • 1/2 t. grated lemon peel
  • 2 eggs
  • 1 cup seedless raisins
  • 1 1/2 cup coarsely grated apple
  • 1/2 cup coarsely grated carrot
  • 2 cup sifted flour
  • 1 t. baking powder
  • 1 t. soda
  • 1 t. salt

Instructions
 

  • Cream shortening, sugar and lemon peel together until fluffy. Beat in eggs, one at
  • a time. Add raisins, apple and carrot. Sift flour with baking powder, soda and
  • salt into raisin mixture. Stir until blended. Turn into greased and floured
  • loaf
  • pan.
  • Bake in 325 degree oven for about 1 hour.
