Cream of Potato Soup
Ingredients
- 2 Tablespoons plus 2 teaspoons butter
- 4 Tablespoon all-purpose flour
- 1 small onion - chopped
- 4 cups milk
- 2 cups diced cooked potatoes
- Salt and pepper to taste
Instructions
- Melt butter in heavy saucepan over low heat.
- Add flour and stir until smooth.
- Add onions (may have to add a small amount of the milk at this point).
- Cook one minute stirring constantly.
- Gradually add milk.
- Cook over medium heat, stirring, until thick and bubbly.
- Stir in potatoes, salt and pepper.
- Cook for 5 minutes or until ingredients are thoroughly heated.
